Chablis 1er Cru Butteaux 2019

The 2019 Chablis Butteaux 1er Cru might well possess the finest aromatics among Servin’s Premier Crus this vintage, leaping out of the glass with vivacious lemon zest, Granny Smith apple and crushed stone notes, and then becoming more floral with aeration. The palate is well balanced with a slightly reduced opening that works in its favor. There is wonderful purity to this Butteaux, and although a little oak still needs to be assimilated with bottle age, give it a couple of years and it will be positively singing.

Noticeable but not really intrusive wood frames ripe pear liqueur-like aromas. There is perceptible wood on the palate as well of the muscular, serious and very solidly concentrated medium-bodied flavors that evidence fine power on the lemony, dry and lengthy finish. This is on the woodier side today, but the necessary mid-palate density certainly appears to be present for it to be progressively integrated.

The latest iteration of a cuvée that's often one of my favorites chez Servin is the 2019 Chablis 1er Cru Butteaux, but this rendition has seen some new oak in addition to its habitual older barrels, and the result is a little excessive to my palate. Aromas of citrus oil and orchard fruit vie with oak vanillin and spice, followed by a medium to full-bodied, rich and fleshy palate that concludes with a rather woody finish. In 2019, I'd look elsewhere in the portfolio, though of course the wine will likely digest its élevage, at least to some extent, with time.
